Health officials monitoring the recent outbreak of “bird flu” in Asia have a chilling reminder of what can happen when strains of avian influenza cross over to humans: The influenza pandemic of 1918—the most deadly outbreak of infectious disease ever—killed 40 to 50 million people throughout the world, according to the World Health Organization.
